Sirohi and Marwari Goat Milk Dairy — Rajasthan

Goat milk is gaining recognition for its A2-type protein, smaller fat globules, and digestive properties compared to cow milk. Rajasthan's Sirohi and Marwari goat breeds are dual-purpose (milk + meat), adapted to arid terrain, and resistant to foot-and-mouth disease. Sirohi goat yields 1–1.5 litres/day; Marwari 0.8–1 litre/day. Goat milk commands premium ₹80–120/litre in urban markets for infant formula, cheese, and health food use. The Barmer, Pali, and Sirohi districts have highest goat density. NDDB's Goat Development Programme supports cooperative milk collection, chilling, and processing. Goat cheese (similar to French chèvre) is being produced by artisan dairies in Rajasthan for the premium hospitality market. Goat dung is prized organic fertilizer. Traditional pastoral communities (Rabari, Bharvad) have 500+ year expertise in goat husbandry across Rajasthan and Gujarat.
