Cane Jaggery (Patali Gur) — Midnapur's Winter Sweet Tradition

Patali gur — solidified sugarcane jaggery moulded into date-palm leaf cones — is a winter specialty of Paschim Medinipur and Bankura in West Bengal. Artisan jaggery makers (gur-wallahs) press freshly crushed sugarcane juice in open iron kadai, skim impurities, and pour into conical moulds at precisely 112°C. Bengali nolen gur (date palm jaggery) and patali gur are used in sandesh and payesh during winter festivals.
