Hyderabad's Nizami culinary heritage produced the dum biryani — long-grain Basmati rice slow-cooked sealed over meat marinated with saffron, kewra, star anise, and mint, a technique from the Nizam court's Persian-Mughal culinary tradition that has spawned a global restaurant industry. The Hyderabad biryani's two main styles — Dum Pukht (sealed pot) and Kacchi (raw meat layered with raw rice) — are debated by enthusiasts; the Shadab, Paradise, and Bawarchi restaurants of Hyderabad's old city (Purani Haveli, Tolichowki) have served thousands of customers daily for decades. Hyderabad's Charminar bazaar area is the centre of the city's pearl and lacquerware craft traditions — Hyderabadi lac bangles in brilliant neon and pastel colours, and the pearl jewellery trade from the Mangatrai and Krishnapearls shops that supplied Nizam court jewellery.
