Sirmaur Jaggery and Traditional Sugarcane Processing

Sirmaur district's lower elevation areas support sugarcane cultivation and traditional jaggery (gur) making with methods similar to neighbouring Uttarakhand and Uttar Pradesh hill districts. Small-scale jaggery-making units operating during October-February process freshly cut cane into jaggery blocks. Traditional knowledge of the boiling process - the right moment to stop heating and pour into moulds - is learned through practical experience alongside master jaggery makers. Different jaggery preparations for specific uses include soft jaggery for sweets, hard blocks for storage, and jaggery mixed with dry ginger or sesame seeds for winter health preparations. The aromatic warm fresh jaggery production season creates a distinctive sensory experience in Sirmaur villages that marks the agricultural calendar.
