Amritsar Kulcha Tandoor Baking Tradition

Amritsari kulcha is a stuffed leavened flatbread baked in a clay tandoor, unique to the street kitchens of Amritsar city. Bakers fill refined flour dough with spiced mashed potato and onion, slap it onto the tandoor wall at high temperature, and serve it with chana dal and white butter. The technique requires precise dough hydration and timed extraction with an iron rod; Amritsar's bakers have transmitted this skill through family lines for generations, making the city's Lawrence Road and Crystal Chowk areas famous across Punjab.
