Udupi Brahmin Vegetarian Cuisine Karnataka Temple Food

Udupi cuisine, originating in the temple town of Udupi in coastal Karnataka, is a vegetarian tradition developed by Madhwa Brahmin temple cooks for the Sri Krishna temple devotees. The cuisine features coconut-based curries, rice-based fermented dishes (idli, dosa, uttapam, kesari bath), and seasonal vegetable preparations without onion or garlic, following strict Sattvic cooking principles. Udupi restaurants popularised across India by migrants from the Tulu Nadu coastal region, spreading sambar, rasam, and masala dosa nationwide. Cooperative cooking training centres in Udupi teach authentic temple cuisine techniques to aspiring cooks. Udupi restaurants now operate in over 50 Indian cities and in the diaspora globally.
