Kadhi pakora is Punjab's signature comfort food: gram flour and sour yogurt are whisked into a thin batter, simmered with turmeric and fenugreek seeds for an hour until it thickens into a yellow sauce, and served with fried gram flour fritters (pakoras) over rice or roti. Fatehgarh Sahib's farm households make kadhi on Sundays and after field harvests using home-cultured yogurt, fresh-ground masala, and mustard oil, with the sour tanginess adjusted by the degree of yogurt fermentation. The dish is deeply embedded in the Punjabi food cycle, using surplus sour yogurt before it spoils and providing a protein-rich meal during lean grain periods.
