Shahjahanpur Rose Water Distillation Gulab Jal Uttar Pradesh

Shahjahanpur district in Uttar Pradesh is one of north India leading rose water (gulab jal) production areas, distinct from Kannauj ittar by producing pure floral hydrosol rather than concentrated essential oil. Damask and Edward rose petals from cooperative gardens are steam-distilled in traditional copper deg (still) vessels to yield clarified gulab jal used in Mughal cuisine recipes, confectionery, and cosmetic manufacturing. Shahjahanpur Rose Cooperative markets 20-litre cans of distilled rose water to halwai sweet-maker networks across Uttar Pradesh and Delhi. Rose cultivation cooperative members grow Damask rose varieties under drip irrigation and harvest in March-April bloom season. Deg distillation cooperatives also produce rose petal concentrate for flavouring tobacco, pan masala, and yogurt desserts. Shahjahanpur rose water was a Mughal court ingredient, referenced in 16th-century imperial kitchen accounts from Agra.
