Salfi Palm Wine Bastar Chhattisgarh Tribal Beverage

Salfi is the traditional sweet fresh sap (and lightly fermented palm wine) of the Salgum palm (Caryota urens), tapped by Bastar tribal communities in Chhattisgarh at dawn before fermentation begins. The tapper climbs the palm, cuts the young inflorescence, and ties a clay pot to collect the sap which flows overnight. Fresh Salfi is mildly sweet and slightly effervescent; by afternoon it becomes lightly alcoholic. Salfi tapping is a traditional livelihood right of designated tribal families under Chhattisgarh excise regulations. In Jagdalpur, Bastar Salfi is sold at roadside stalls and cooperative Salfi parlours. The Chhattisgarh government supports cooperative Salfi production as an alternative tribal livelihood and tourism attraction at Bastar cultural events.
