Hyderabad Dum Biryani Nizami Cuisine Telangana

Hyderabad Dum Biryani, the signature dish of Nizami cuisine, is cooked by layering half-cooked basmati rice with marinated meat (kacchi gosht method) or pre-cooked meat (pakki gosht) in a sealed handi pot over slow coal fire. The technique locks steam inside the pot allowing rice to absorb meat juices and saffron milk. Authentic Hyderabadi Biryani uses Andhra Chilli paste, Deccan spices, and Basmati rice from Telangana. The Hyderabadi Biryani economy supports an estimated 30,000 biryani cooks, restaurants, and supply chain workers in Hyderabad metropolitan area. Cooperative training centres teach authentic Nizami technique to aspiring cooks. Hyderabad Biryani has received GI application status under Telangana government.
