Raipur Chhattisgarhi Forest Cuisine Tribal Foods

Chhattisgarhi cuisine in Raipur and surrounding districts draws heavily from forest produce, tribal farming traditions, and rice-based cooking. Signature preparations include bafauri steamed black gram balls, angakar roti sorghum flatbread on clay griddle, chechbhaji chopped fiddlehead fern with garlic, and poha flattened rice with peanuts. Forest greens such as lal bhaji amaranth and kathal jackfruit curry are seasonal staples. Red fire ant chutney called chaprah is a distinctive tribal condiment using dried weaver ants. Mahua flower is used in cooking as sweetener and in fermented beverages. Wild mushrooms collected from sal forests during monsoon form an important seasonal protein source for forest-edge tribal communities.
