Khari Baoli in Old Delhi is the continent largest wholesale spice market, operating since the Mughal era at the base of Fatehpuri Mosque near Chandni Chowk. Narrow lanes packed with 200-year-old spice godowns (warehouses) trade in cumin, coriander, red chilli, turmeric, pepper, cardamom, clove, bay leaf, and over 400 varieties of spice, dry fruit, and herb annually. Traders grade incoming spice by smell, colour, and moisture using hand-pinch assessment skills passed through family apprenticeships of 3-4 generations. Cooperative spice blenders from Khari Baoli supply packaged masala to restaurant chains across India and export cleaned and packed spice to the Gulf, Europe, and North America. The market supports an ecosystem of commission agents (arathia), porters, packaging workers, and traditional measuring-weight craftsmen. Evening grinding cooperatives produce freshly milled kitchen masala blends to order.
