Nolen Gur Date Palm Jaggery West Bengal

Nolen gur is a highly prized seasonal liquid jaggery tapped from the date palm (Phoenix sylvestris) during the winter months from November to February in the deltaic districts of West Bengal — 24 Parganas, Murshidabad, Nadia, and Midnapore. Skilled tree-climbers called shiuli sharpen clay pots (haandi) and fix them to the cut inflorescence stalk at dusk; the sap drips overnight and is collected before sunrise to prevent fermentation. The fresh sap is boiled down to produce nolen gur (liquid jaggery) or patali (solidified cake). Nolen gur has a distinctive caramel-floral fragrance unlike sugarcane jaggery. It is used to sweeten winter sandesh (cheese sweets), payesh (rice pudding), and pithe (rice cakes). Date palm sap collection is a skill specific to the Bengali seasonal calendar and supports thousands of collector families.
