Nagauri Fenugreek (Methi) — Rajasthan

Nagaur district in Rajasthan produces the world's finest fenugreek seeds, known as Nagauri methi, with a GI tag granted in 2011. The specific combination of alkaline sandy loam soil, low humidity, and extreme day-night temperature variation in Nagaur gives the seeds their unique intensely aromatic flavour profile — higher fenugreek alkaloid content than varieties grown elsewhere. Rabi season crop (October-February). Seeds are smaller, lighter in colour, and more fragrant than other varieties. Nagauri methi commands 20-30% price premium in Indian spice markets and in export. The Nagaur mandi (APM market) handles over 50,000 tonnes annually — the largest fenugreek market in Asia. Leaves (kasuri methi — dried) are equally prized. Spice Board India certifies Nagauri methi exports. Processing units in Nagaur clean, grade, and pack seeds for export to Europe, USA, and Middle East. Local farmers have transitioned from jowar to methi for better returns.
