Adi Apong Rice Beer Brewing Arunachal Pradesh Tribal

Apong is the traditional rice beer of the Adi tribe of East Siang and Upper Siang districts in Arunachal Pradesh, brewed in every household by women using a multi-step fermentation process. Two varieties exist: Poro Apong (clear, filtered, mild) brewed for daily consumption, and Nopo Apong (thick, unfiltered, strong) reserved for festivals. Apong is essential to every Adi social occasion — weddings, harvest festivals, funerals, and negotiations. The brewing uses locally grown hill rice and a starter culture (Peroings) made from dried rice flour and wild herbs. Apong cannot be stored beyond a week and is always freshly brewed. The Adi Baane Kebang (women council) oversees brewing traditions and social norms around consumption.
