Jolada Roti and Saggubiyam Gruel — Vikarabad Rural Food Tradition

Vikarabad district's farming communities maintain the traditional dryland food culture centred on jowar flatbread (jolada roti or jonna rotte) and saggubiyam (sago pearl porridge) as daily staples. Jonna rotte — made from red jowar flour patted thin and cooked on a wood fire griddle — is the rural family's daily meal, eaten with spiced green chilli chutney and sambar. Saggubiyam gruel, prepared from soaked sago pearls cooked to a thick porridge, is consumed as a cooling summer food and given to recovering patients. The specific jowar varieties grown in Vikarabad's upland farms produce a distinctively flavoured grain that local households prefer over commercially milled generic jowar flour.
