Garhwali Traditional Cuisine and Food Preservation

Garhwali traditional cuisine from the Dehradun region is characterised by whole grain preparations, wild foraged ingredients, and minimal processing suited to the mountain environment. Jhangora (barnyard millet) kheer, Chainsoo (black gram dal), Dubke (kidney bean curry), and Kafuli (green leafy preparation) form the core of traditional diet. Mandua (finger millet) roti provides sustenance in high-altitude villages where wheat grows poorly. Preservation techniques include sun-drying of seasonal vegetables and fruits, fermenting local grains for Chhang (millet beer), and making spiced pickles that last through winter months. Wild mushrooms, ferns, and tubers supplement the diet during lean seasons drawing on extensive forest knowledge.
