Udupi district is the spiritual and culinary capital of coastal Karnataka — home to the Udupi Krishna temple (established by Madhvacharya, 13th century) and the Udupi cuisine tradition of strictly vegetarian brahmin food from which "Udupi hotel" restaurants spread across India, establishing a pan-Indian template of idli, dosa, sambar, rasam, and rice that became South Indian cooking's global identity. The Udupi Brahmin prasadam tradition of rotating daily offerings to the Krishna idol (the paryaya system, where 8 mutts alternate control of the temple every two years) maintains elaborate temple cuisine protocols that have preserved recipes for 800 years. Udupi's Malpe beach fishing community harvests the Arabian Sea for mackerel, pomfret, tuna, and prawn in the monsoon and post-monsoon seasons.
