Tripura Bamboo Shoot Berma Fermented Fish Tripuri Cuisine

Tripuri cuisine is defined by two foundational fermented foods: bamboo shoot (muya) fermented in sealed bamboo tubes for months to produce a pungent condiment, and Berma, a dried and fermented small fish pressed into cakes. Both foods preserve harvests through the monsoon and form the basis of Tripuri stews, curries, and chutneys eaten daily in tribal households. Bamboo shoot fermentation uses Melocanna baccifera shoots collected from the wild. The knowledge of fermentation timing, salt ratios, and storage is passed down through women in Tripuri families. Cooperatives in Khumulwng and Agartala now market clean-processed bamboo shoot pickle under organic certification.
