Shahjahanpur Rose Water Ittar Cooperative Uttar Pradesh

Contributed by Swadesi Knowledge Team

Shahjahanpur district in Uttar Pradesh grows the Damask rose variety for rose water and ittar perfume distillation, a tradition inherited from Mughal court fragrance culture. Rose petals are picked before sunrise when essential oil content is highest, then loaded into copper degs still vessels with water. Wood-fire heating drives aromatic steam through a bamboo or copper pipe into a receiver vessel with sandalwood oil base. The distilled attar settles into the oil phase and is decanted. Shahjahanpur ittar cooperatives sell rose, khus vetiver, kewra, and marigold attars at Kannauj and Lucknow fragrance markets. Cooperative growers receive advance payment for rose crop and access to distillation equipment through shared facility cooperatives. Small-batch Shahjahanpur rose water is used in Mughlai cooking and Ayurvedic preparations.
