Puri in the Puri district of Odisha is home to the Jagannath Temple mahaprasad tradition, one of India most remarkable temple food systems where over 10,000 pilgrims are fed daily with cooked rice, dal, vegetable curries, and khichdi prepared in what is claimed to be the world largest outdoor kitchen using wood-fired clay pots stacked in specific configurations. The Suara caste of temple cooks have hereditary rights to mahaprasad preparation for over a thousand years, maintaining recipes and ritual cooking practices within family lineages. Mahaprasad is considered so sacred that leftover food is not considered impure but blessed. The cooperative of the Anand Bazar — the temple market where 168 stalls sell fresh mahaprasad daily — is a unique institutional form where caste-based food preparation meets cooperative distribution. The Puri mahaprasad cooperative model is studied by food systems researchers for its scale, consistency, and centuries of continuous operation. Puri is also the start point of the Rath Yatra chariot festival.
