Mangaluru (Mangalore) in Dakshina Kannada district is the cultural centre of the Tulu-speaking coastal community whose cuisine — Kori Roti (dried rice crepe with spiced chicken curry), Neer Dosa (water dosa with coconut chutney), fish curries in coconut and tamarind base — is one of South India's most distinctive coastal food traditions. The Konkani Saraswat Brahmin community's fish pickle (sol kadhi with kokum) and the Beary Muslim community's biryani and halwa traditions add to the district's culinary diversity. Mangaluru's cashew processing industry — the city processes 15-20% of India's cashew kernel export output — employs tens of thousands of women workers who shell, peel, and grade cashew kernels in cottage and factory units for export to the US, Europe, and the Middle East.
