Makhana Foxnut Phool Makhana Bihar

Bihar produces 85% of the world's makhana (Euryale ferox fox nut seeds). Grown in shallow water bodies and ponds of Darbhanga, Sitamarhi, and Madhubani districts, makhana is harvested by Mallah fishing communities who dive to collect seeds from the pond floor. After washing, seeds are sun-dried and then roasted on sand in enormous pans at 300°C until they pop white. GI-tagged, makhana is now being exported as a premium super food to health-conscious markets in the US and Europe at premium prices.
