Bhiwani Mustard Oil Cold Press Village Ghani

Contributed by Swadesi Editorial Team

Bhiwani's rabi mustard crop is processed at village ghani presses during the February-March harvest, with bullock-powered and electric expeller units extracting cold-pressed sarson oil that retains the sharp pungent character and high erucic acid profile valued in Haryana's traditional cooking. Bhiwani mustard oil is used for bajra roti accompaniment, making saag, and frying pakoras at village gatherings; the oil's flavour is considered essential for the authentic taste of Haryana's traditional dishes. Small packaged oil enterprises from Bhiwani are now marketing cold-pressed mustard oil to urban buyers in Delhi and Gurugram who seek traditionally produced cooking fats.
