Jayanagar moa is a small spherical sweet made from khoi (puffed paddy) bound with nolen gur (date-palm winter jaggery) and flavoured with cardamom, produced exclusively in Jayanagar-Majilpur in South 24 Parganas and a few adjacent Hooghly villages from November to February during the date-palm toddy season. The Jayanagar moa has Geographical Indication status and is considered one of Bengal's most distinctive seasonal sweets — available only during the nolen gur season (November-February) when fresh date-palm jaggery is tapped from palm trees in the Sundarbans hinterland. The moa-making community of confectioners (moira caste) in Jayanagar maintains the traditional ratio of khoi to nolen gur, binding the moa by hand while the jaggery is warm.
