Ghazipur Rose Water Gulkand Rose Petal Distillation Uttar Pradesh

Ghazipur district in eastern Uttar Pradesh is a centre of rose cultivation and processing where farmers on Ganga floodplain fields grow Damask rose (Rosa damascena) for petal distillation into rose water (gulab jal), rose oil, and the preserved petal confection gulkand. Ghazipur rose water is distinct from the more famous Kannauj attar production in that it uses direct steam distillation of fresh petals in copper degs (stills) rather than hydro-distillation over sandalwood oil, producing a pure rose water used in food flavouring, religious offerings, and Unani medicine as a cooling eye wash. Petals are harvested at dawn before full opening for maximum aromatic oil content, destemmed by hand, and fed into the still within two hours. The gulkand is prepared by layering fresh petals with raw sugar in clay pots and sun-fermenting for 30-40 days into a dark fragrant paste used in paan, ayurvedic cooling preparations, and sweet shops. Ghazipur rose farmers are organised under the UP Horticulture Department's rose cluster programme that provides disease-resistant planting material and distillation still loans.
