Chettinad Cuisine Spice Masala Sivaganga Tamil Nadu

Chettinad cuisine from the Sivaganga district of Tamil Nadu is regarded as one of India's most complex and aromatic regional food traditions, developed by the Nattukotai Chettiar (Nagarathar) mercantile community whose global trading networks brought back exotic spices and preserved meat techniques that became the foundation of a cuisine distinguished by its use of freshly ground spice blends (kalpasi, marathi mokku, stone flower, star anise, black stone flower, and dried peppercorns) that are absent from most Indian regional cooking. Chettinad's signature dishes include Chettinad chicken curry, mutton kola urundai (minced meat dumplings), kavuni arisi (black glutinous rice pudding), and a range of vegetarian dishes featuring lotus seeds and dried greens. The cuisine uses specific ceramic cookware and the Sunday market at Karaikudi is the source for fresh-ground Chettinad masala. Chettinad spice blends are now packaged and sold nationally and internationally as premium regional food products under the Chettinad brand. GI application is in progress for Chettinad masala.
