Sharbati wheat (also called golden grain wheat) grown in Sehore and Vidisha districts of Madhya Pradesh is India's premier premium bread wheat — a large-grained, amber-coloured, sweet-tasting wheat variety produced in the Narmada belt's deep black cotton soil (regur) that is prized by bakers, pasta makers, and atta flour millers for its exceptional flour quality. Sharbati grain has a high protein content (12 to 14 percent), excellent gluten development for bread dough strength, a distinctive mild sweetness from natural sugar content, and very high test weight (80 to 82 kg per hectoliter versus national average of 77). These characteristics come from the specific combination of deep black Vertisol soil with high water retention, cool dry Deccan winter temperatures, and well-distributed canal irrigation from the Tawa and Bargi dam systems. The variety grown is NW 1014 (Lokwan) or MP 4010 — both large-grain amber wheats selected by JNKVV Jabalpur for the Madhya Pradesh environment. Sehore's flour market is nationally known — Sehore wheat atta commands a premium in modern trade retail where it is branded by large flour companies. Export of whole Sharbati wheat to Gulf and Europe for traditional Indian bread preparation by diaspora communities. Premium whole-grain Sharbati atta marketed by cooperative mills directly to urban consumers at 40 to 50 percent premium above commodity wheat price.
