Zanskar Kargil Tsampa Roasted Barley Grinding Ladakh

Tsampa — roasted barley flour ground in water-powered stone mills (gharat) — is the staple diet of Zanskar Valley communities in Kargil district Ladakh, consumed as porridge with butter tea (gur gur chai), made into bread, or mixed with curd and dried apricot for travel rations. Zanskar valley barley cultivation at 3500-4000 metres altitude is one of the highest cereal growing systems in the world, with short-season Himalayan barley varieties adapted to 90-day growing windows between snowmelt and first frost. Cooperative gharat (water mill) owners in Padum, Zangla, and Pishu operate communal milling facilities grinding grain for village cooperative members. Tsampa preparation and consumption rituals are integral to Zanskar Buddhist monastery (gompa) cooking practice. Cooperative dried apricot and barley package products from Zanskar are marketed through the Ladakh Autonomous Hill Development Council outlet in Leh.
