Tirunelveli Wheat Halwa Tamirabarani River Tamil Nadu

Tirunelveli halwa, the dense translucent wheat starch confection of Tirunelveli town, Tamil Nadu, is produced by a traditional method that depends on the specific mineral content of the Tamirabarani river water to produce its distinctive golden-amber colour and smooth texture, and has been associated with the Muslim Maraikayar sweet-makers of Tirunelveli for at least 200 years. The halwa process begins with soaking whole wheat in water for several days, then kneading and washing the soaked grain repeatedly to extract pure gluten-free wheat starch milk from which all fibre and protein are removed, leaving only the fine starch suspension. The starch milk is cooked with generous quantities of refined ghee, sugar, and saffron over a wood-fire cauldron with continuous stirring for four to five hours until the mixture thickens, turns translucent, and achieves the correct elastic-pull texture. Tirunelveli halwa is sold fresh at the Sweet Bazaar (Sarbath Kadai area) in Tirunelveli town and shipped by courier to Tamil diaspora destinations in Singapore, Malaysia, and the USA. GI status under the Tamil Nadu Geographical Indications application protects the name and the Tamirabarani water specification.
