The Sehore and Vidisha wheat milling industry in Madhya Pradesh has grown around the premium Sharbati wheat variety to become a nationally recognized provenance-based flour brand. Unlike commodity wheat milling where grain from multiple origins is blended, Sehore Sharbati atta mills process only Sharbati wheat from the Narmada basin black cotton soil belt, maintaining the distinct nutritional and flavour profile — sweeter, higher protein, better gluten development — that makes Sharbati atta preferred by discriminating consumers. The milling process for premium Sharbati atta uses stone chakki (traditional stone grinding) or roller mill on-site at cooperative miller facilities to produce whole wheat flour without chemical bleaching or artificial enrichment. Small cooperative mills in Sehore and Ashta operate direct-to-consumer models supplying 5 kg packs to urban households via e-commerce subscription with bi-weekly delivery of freshly milled flour. Premium Sehore Sharbati atta retails at 80 to 120 rupees per kg versus 40 to 50 rupees for commodity wheat atta — the premium reflects traceable single-origin grain, no mixing, and freshly milled without shelf-extending additives. Export to Gulf and UK Indian diaspora through specialty Indian grocery channels.
