Ambemohar rice is a fragrant short-grain variety grown in Raigad and Ratnagiri districts of the Konkan, named for its mango-blossom aroma during cooking. It is central to Maharashtrian cuisine — used in varan bhat (dal-rice), modak, and festive rice dishes. Cultivation requires specific laterite soil and humid coastal microclimate, limiting production to Konkan farms. Cooperative networks help Ambemohar farmers access premium organic-certified markets in Mumbai and for export.
