Ferozepur Traditional Desi Ghee Making Punjab

Desi ghee from Ferozepur's buffalo and cow dairy households is made using the traditional bilona method: raw whole milk is cultured with a yogurt starter, set overnight, churned in a clay pot with a hand-held batten, and the separated white butter is slow-cooked in an iron kadhai over a wood fire until the milk solids caramelise and settle at the bottom. The resulting ghee has a nutty aroma distinct from factory ghee and is a premium product sold by dairy cooperatives at local mandis and through family networks. Ferozepur's desi ghee is also sent as a valued gift with brides returning to natal homes on festival visits.
