Bathinda Mustard Cold Press Oil Extraction

Bathinda and adjoining Malwa districts grow sarson yellow mustard as a winter rabi crop alongside wheat, and village-level ghani presses extract mustard oil by cold-pressing seeds in an animal-powered wooden screw press or electrically operated expeller. Bathinda's cold-pressed mustard oil retains high allyl isothiocyanate content and a pungent aroma that mass-refined oils lose; village households prize ghani oil for its authentic flavour in sarson da saag, pickles, and deep-frying. KVIC promotes small ghani cooperatives in Bathinda's villages to revive cold-press oil and create rural processing livelihoods.
