Tirunelveli Wheat Halwa Iruttu Kadai Sweet Tamil Nadu

Tirunelveli in Tamil Nadu produces a distinctive wheat halwa (Tirunelveli Halwa) considered one of the finest traditional sweets of South India, made from sprouted wheat (gothumai) slow-cooked with ghee and jaggery in large copper vessels over wood fire for 4-6 hours until a semi-transparent, dark caramel block forms. The distinctive colour and taste come from slow caramelisation in copper rather than stainless steel. The halwa is sold at the iconic Iruttu Kadai (Dark Shop) that has operated without electric lighting since the 19th century. Tirunelveli Halwa holds a Geographical Indication tag. Cooperative sweet-maker guilds in Tirunelveli town procure organic sprouted wheat from Tirunelveli district cooperative farms and sell through SANBOSA (Sankarankovil and Palayamkottai) distribution chain. The halwa is a mandatory gift item for Tirunelveli diaspora communities in Malaysia and Singapore.
