Nagaon (Nowgong) district in central Assam grows mustard (Sarson) on the Brahmaputra's alluvial plain as a winter cash crop, producing the raw oil seed for Assam's traditional cold-pressed mustard oil that is the cooking fat of choice for Assamese households and central to the region's cuisine. The district's Brahmaputra river stretch hosts productive freshwater fisheries for rohu, catla, and the prized mahseer — Assam's fish traditions including dried fish (sidhi/sukati) preparation are markers of the state's cultural identity. Cachar district (Silchar) in the Barak valley is a distinct Bengali-speaking cultural zone with a major fishery in the Barak river; the Barak valley's handloom tradition produces cotton and silk fabrics with Bengal-influenced patterns different from the Brahmaputra valley tradition.
