Tikkar Roti, Mahua, and Bagheli Food Culture of Katni

Katni food culture spans the urban-industrial and rural-tribal spectrum. Tikkar roti — a thick flatbread of coarse wheat and jowar mixed flour — is the village staple, more filling and nutritious than refined flour chapati. It is traditionally baked on a cast iron tawa over a wood fire, taking longer than fine flour bread and requiring more skill to cook evenly. Mahua spirit and mahua sweets are part of the tribal community food calendar in the forest-edge villages. The Katni market area has developed a street food culture shaped by its railway junction status: chaat, puri-sabzi, and poha stalls cater to train travellers. Maize roasting on coal is practised at Katni junction, with vendors timing their sales to train arrival and departure schedules. The diversity of migrant communities from cement plant labour has introduced Odia, Chhattisgarhi, and Bihari food preparations.
