Kargil Apricot Sun Drying Buckwheat Ladakh

Kargil district in Ladakh produces organic apricot (Prunus armeniaca) on sun-drenched terraced slopes of the Suru and Wakha river valleys at 2500-3500 metres altitude, irrigated by ancient kul (glacial channel) systems maintained by village cooperatives. Ladakhi apricot varieties are distinct from commercial counterparts — smaller, intensely sweet, and solar-dried without additives on flat rooftop platforms for three to four weeks. Buckwheat (Fagopyrum esculentum) is cultivated as a winter-hardy companion crop in altitude-adapted rotation alongside apricot gardens. Cooperative processors in Kargil town pack dried apricots and sweet apricot kernels (distinct from bitter varieties) for health food export to Delhi and European markets. Traditional cold-pressed apricot kernel oil, used as cooking fat and cosmetic by Balti and Dard communities, is sold through the Ladakh Cooperative Development Corporation.
