Bongaigaon Assam Pitha Rice Cake Tradition

Pitha are Assamese steamed and pan-fried rice cakes prepared during Bihu festivals and family gatherings in Bongaigaon district along the Assam plains. Families soak glutinous and non-glutinous rice varieties overnight, grind wet on stone slab, and shape into cylinders wrapped in banana leaf, sweet til-pitha sesame rolls, or thin kholasapori pitha fried in mustard oil. Bongaigaon district grows several aromatic short-grain rice varieties suited to pitha texture. Women pass recipes intergenerationally. The rice grinding stone, or jata, is kept as household heirloom. Pitha prepared for Bihu gifting and community feasts signal cultural continuity in lowland Assam farming communities.
