Belagavi in North Karnataka is the heartland of jowar sorghum cultivation and the bhakri flatbread food culture that defines Kannada-Marathi borderland cuisine. Farmers in the semi-arid black cotton soil of Belagavi, Dharwad, and Vijapura districts grow native jowar varieties including maldandi sorghum — a tall, drought-resistant strain appreciated for its sweet stalk and nutritious grain — and supply cooperative procurement centres for flour milling. Women in villages across North Karnataka hand-pat jowar bhakri without a rolling pin, a technique passed through generations requiring skilled palm pressure to achieve even thickness before cooking on open iron tawe griddles. Jowar bhakri served with ennegayi stuffed brinjal curry, shenga chutney, and fresh green chilli is the canonical meal of the region. Farmer producer organisations in Belagavi market maldandi jowar flour under cooperative brands to health food retailers in cities promoting millets as nutritious traditional staples.
