Basmati rice, the long-grain aromatic variety cultivated in the terai and sub-Himalayan foothills belt stretching from Dehradun through Saharanpur, Muzaffarnagar, and Bijnor districts of Uttar Pradesh into Punjab and Haryana, commands a significant premium in domestic and export markets for its distinctive 2:1 elongation on cooking, aged earthy aroma, and non-sticky separated grain texture attributed to the alluvial soil composition and cool night temperature in the foothills during grain filling. Basmati holds a Geographical Indication protected under the Indian GI Act covering seven states and an agricultural zone demarcated by the Basmati Export Development Foundation under APEDA, and premium varieties including Pusa Basmati 1121, Traditional Basmati, and Dehradun Basmati command export prices three to five times above common rice. The cultivation system in Uttar Pradesh Basmati belt involves transplanting 40-day nursery seedlings in July, managing the crop through 90-100 day maturation without excessive nitrogen application that reduces aroma, and harvesting and threshing carefully to prevent grain breakage that reduces the export premium. India exports approximately 5 million tonnes of Basmati annually to the Middle East, USA, and Europe, with Uttar Pradesh supplying a major share.
