Awadhi cuisine from Lucknow is renowned for its dum pukht (sealed steam-cooking) technique, producing the finest biryanis, kebabs (galouti, kakori, seekh), and kormas in India. The Nawabi court of Awadh developed slow cooking over low coals to preserve maximum flavour. Lucknow's Tunday kababi, Raheem's nihari, and Idris biryani are institutions. Awadhi cuisine uses whole spices, saffron, and generous ghee. The culinary tradition is now branded in premium restaurant chains globally.
